Yep!  That is why I only make suggestions because everyone is different.  It could also be the guy is doing a "light" day when you asked.  Generally here is the breakdown I follow:

HEAVY DAY
No more then 3 sets per body part w/ 4-6 reps.  Dying on the last rep of each set and usually need help on the last set

LIGHT DAY
May go as high as 5 sets per body part w/ 10-12 reps.  More for muscle endurance then anything else

MEDIUM
5 sets per body part.  6-10 reps. 

That's what I follow and is along the accepted wisdom.  I have seen some really big dudes to more sets, less reps, negatives, and maxes for their HEAVY days.  Get a goal (weight loss, increase size, maintain size & cut fat) and find what works for you inside your plan.

I never lift for a pump.  I usually "feel the burn" from the tired muscles though.

Yes, there are eight hyung for the coloured belts plus two basic forms taught at white belt.  Each dan rank has a hyung as well.  The coloured belt forms are all using a standard mok-do (katana sized), while the first and second dan hyung utilize two short mok-do (wakizashi sized).  The hyung are all done using a mok-do.  In addition, there are five two person mok-do techniques that we practice which involve attack and defense.  With the juk-do, there are all of the two step sparring techniques, ji-geiko (Japanese kendo term, not sure of the Korean term), and of course, sparring.

I am at a wierd stage at present. I weight train 3 times a week with a 20 minute run after then another 3 times a week i do pure cardio, 3k row, 20 mins on a cross trainer then a 25 minute (5k run). The problem is that I dont seem to be getting any better and the running or weight training. I am still just a knackered now at the end as I was when i stepped it up a notch. I still cant lift more weight, or run further etc and its getting me down a bit.

Still i am sure its just a slump!! I am entering in the Scottish Open National Champs ( i missed the UK ones) at the end of the month and i want to drop 4kg to go down a weight class.

My classes are going better though now as i seem to be fitter in TKD, just not at the gym. Another good thing (well my missus appreciates it the most!) is that in the past 2 months i have dropped about 10kg in weight!

Thanks for the nice vid comment about my timing. My reaction time has slipped because I don't have an opportunity to spar that often anymore. And you are right about my reach. I think my reach is awful. My problem is that I have to learn to throw my hips form when I throw those kicks to get a better reach but I am always so nervouse to do that now because of my back. Oh to be young again...  How is your training going?
